Viticulture: Certified biodynamic since 2005. Sangiovese from south- and southwest-facing vineyards at 210–290 m. Each parcel hand harvested separately. 

Winemaking: Native-yeast fermentation in small wooden vats, each vineyard vinified separately. Aged for 34 months in 15–17 hL oak barrels, followed by 30 months in bottle. 

Stella di Campalto, established in Tuscany in 1910 and revived in 1992, is a pioneer in biodynamic wine production. Its estate, Podere San Giuseppe, is known for organic practices since 1996 and biodynamic since 2005. The winery specializes in Brunello di Montalcino, characterized by elegance and aromatic delicacy, and releases wines later for optimal development​.

The Stella di Campalto winery, officially known as Podere San Giuseppe, was originally founded by Stella's grandfather. Since the 1940s, however, the property had been abandoned, consisting of 15 hectares of fallow land and buildings in need of renovation.
