Viticulture: Certified organic with biodynamic practices. Hand-harvested field blend from small, rocky parcels planted with vines over 100 years old at 870–890 metres. Predominantly Tempranillo with Albillo Mayor and other local varieties.
Winemaking: Whole clusters are foot-trodden and co-fermented with indigenous yeasts in concrete tanks. Malolactic fermentation takes place in barrel. Aged for 51–55 months in old French oak barrels in the estate’s underground cellars.
