Viticulture: Certified organic and biodynamic. Sangiovese planted in the late 1990s near Castelnuovo dell’Abate on clay, galestro and limestone soils. Hand harvested.
Winemaking: Native-yeast fermentation by parcel in upright wooden vats. Aged for around 19–22 months in 225L casks and 900L tonneaux, followed by extended bottle ageing. Unfined and unfiltered.
Stella di Campalto, established in Tuscany in 1910 and revived in 1992, is a pioneer in biodynamic wine production. Its estate, Podere San Giuseppe, is known for organic practices since 1996 and biodynamic since 2005. The winery specializes in Brunello di Montalcino, characterized by elegance and aromatic delicacy, and releases wines later for optimal development.
