Viticulture: Certified organic. Single south-facing vineyard in La Aguilera at around 900 m. Ungrafted mixed ancient vines with some over 150 years old, on sandy, chalky decomposed limestone. Hand harvested.
Winemaking: Whole-cluster co-fermentation of Tempranillo, Cariñena, Bruñal, Bobal, Albillo and other varieties with native yeasts in concrete. Foot pigeage. Aged for around 30 months in French oak barrels.
