Viticulture: Certified organic. Albillo Mayor from vineyards over 100 years old, including some ungrafted vines, at 800 meters in altitude. Hand harvested. 

Winemaking: Whole clusters foot-trodden and pressed. Native-yeast fermentation in neutral French oak, lasting up to 10 months. Aged for 35 months on fine lees in neutral oak without bâtonnage or racking. No new oak.
